Coffee Thins™ are part of a unique family of foods & beverages that uses whole roasted coffee beans. This is a green technology, and there is no waste from the coffee beans.
Liquid coffee is prepared by infusion of roasted & ground coffee in hot water using different tools and accessories. The extraction yield is around 20%, which generates about 80% of waste, in the form of spent ground. Conversely, Coffee Thins™ are processed through means of a patented technology that allows the coffee bean to be used in its entirety. The result is a diversity of natural aromas, tastes, and flavors that are unique to this product.
Most flavor and aroma compounds found in coffee beans are lost during brewing and are discarded as almost 80% of spent ground. Our patent technology enables us to convert the whole coffee bean into products that have a richer taste than a brewed cup of coffee. A cup of coffee has only one flavor family (coffee). Our technology retains the five common families of flavors found in the beans (caramel, chocolate, coffee, malt, and nuts).
Dunkin’ – best before date consists of 6 numbers in the form of MMDDYY. This date is set 1 year after manufacture date. Lot # consists of a letter and a number, such as A1, and is used for internal purposes. For example, Best before: 090719 (manufactured on 090718) Lot: A1
There are 2 main types of bloom: fat and sugar bloom. Fat bloom occurs due to the migration of fat to the outer parts of the products, resulting in a shiny, white surface. Sugar bloom results when moisture comes into contact with the product, which dissolves the sugar on its surface. When dry, the sugar can crystallize and precipitate on the surface of the product, resulting in a dusty appearance.
The white color on this type of product can be a sign of bloom. These are physical changes in the product and to not pose any health concern. The product might taste different due to a differential crystallization of fat and/or sugar.
The basic components of the Coffee Thins™ are not allergenic and include coffee, sugar, and cocoa butter. Among the optional food components, there are those that are allergenic, such as dairy ingredients. The product may contain traces of peanuts and other tree nuts (hazelnuts, almonds), although cleaning & sanitation procedures are in place to avoid cross-contamination.

Each Dunkin’ Coffee Thins™ has 4 g of added sugar per Thin. Coffee Thins™ usually have less sugar than chocolates, although it is required around 1/3 of the formulas to counteract the coffee intensity.
In general, a Coffee Thin has approximately 7-8 mg of caffeine per Thin. In comparison, a brewed cup of coffee (6.5 to 8.5 fl. oz.) can have between 60–120 mg of caffeine.
Typically, Coffee Thins™ contain deodorized cocoa butter for structural reasons, and not for flavor contribution. By using it, it is possible to obtain a coffee bar that physically behaves as a chocolate bar (in terms of melting down while being consumed), although delivering the 100% coffee aroma & taste. In this case, no cocoa solids are added in the Thins. In certain cases, cocoa powder is used for the preparation of cappuccino and mocha versions.
FDA has specific requirements for the product to be classified as chocolate, such as use of cocoa liquor (or cocoa mass). Conversely, Coffee Thins™ are based on the use of whole coffee beans and as such cannot be classified as chocolate. They look similar, but their ingredients are different.
